Carrot Cake Energy Bites 🥕

A no-bake, nutrient-dense snack to keep you energized!

Ingredients:

  • 1 cup shredded carrot (finely grated)

  • ½ cup unsweetened shredded coconut

  • ½ cup almond flour (or oat flour for nut-free)

  • ½ cup Medjool dates (pitted and soaked if dry)

  • ¼ cup walnuts or pecans (optional)

  • 1 tbsp chia seeds (for fiber + omega-3s)

  • 1 tbsp maple syrup or honey (optional, for extra sweetness)

  • 1 tsp cinnamon

  • ½ tsp vanilla extract

  • ¼ tsp nutmeg

  • Pinch of sea salt

Instructions:

  1. Add all ingredients to a food processor and blend until a sticky dough forms. If too dry, add 1–2 tsp water.

  2. Roll into small bite-sized balls.

  3. Optionally, roll in more shredded coconut for extra texture.

  4. Refrigerate for 30 minutes to firm up. I LOVE them right out of the freezer!

  5. Enjoy as a pre- or post-workout snack!
